Most of the time, though, they are good, and just need a little bit of tweaking to fit our likes and personal preferences.
Tonight we tried a recipe from the Pioneer Woman - Ree Drummond. Chicken with Tomatoes and Garlic. Yummo yum!! Seriously, this was so easy, and most everything I had (or should have had) on hand.
**Really, who runs out of canned tomatoes, and doesn't know it!!**
Besides the fact that it was REALLY yummy, we have two tweaks to this recipe.
1) We're gonna take off the skin next time. Because it spends an hour in the oven, it doesn't get crispy. And chicken skin should be crispy, dang it!! Instead, we are gonna dredge the chicken pieces in flour before frying to protect the meat.
2) When I pulled it out of the oven, there was a layer of grease on top, and that just didn't appeal to me. So, probably gonna cut the oil down to 1.5 tablespoons. Loosing the skin will help in this, too.
So here you go: Chicken with Tomatoes and Garlic It got the Fluharty thumbs UP!
